Pizza Recipe


Once our son was diagnosed with celiac disease, we thought our pizza days were surely over.

Until.....











We found Schar Pizza Crusts and Ragu Homemade Style Pizza Sauce!

Per a phone conversation with Ragu, they assured that all their pizza sauces are gluten free.  The traditional pizza sauce lists modified food starch on their label.  The lady at Ragu said that it is from corn.  I personally use the Homemade Style.




A note for diabetics:  1 serving = 1/3 of a pizza crust = 30g.  The plate shown above contains 1 serving.

Old El Paso Taco Shells - Gluten Warning!

I always have some gluten free corn tortillas on hand to take with us to our weekly Moe's visit.  I normally purchase my corn tortillas at a gluten free store, but I forgot to pick them up this week.

So......I decided to purchase Old El Paso corn tortillas at my local grocery store.  I checked the ingredients and it only listed corn, palm oil and a preservative.  I thought, "ok", these should be fine.

When I got home, I immediately googled to see if they were gluten free.  Many people mentioned on the celiac forums that they were indeed gluten free.

Still not feeling 100%, I decided then to go straight to the source and call them directly.  I was shocked when the woman said, "They are NOT gluten free!".  She came to this conclusion through the numbers that were printed on the box.

PLEASE, PLEASE be sure to contact the manufacturers on products that might appear to be gluten free.  A lot of times, they are processed on the same equipment as wheat products.

Yummy Kid's Nutrition/Energy Bar Product Review

I am glad to present CAN DO KID Gluten Free Nutrition/Energy Bars!
  • Made with 9 grams of protein and 16 essential vitamins and minerals

  • Available in three great flavors: Chocolate Crunch, Cookies and Cream, and CAN-illa Vanilla

The kids and I have tried the Cookies and Cream and Vanilla flavors.  The vanilla has a hint of cinnamon which makes it very tasty, but our favorite so far is the Cookies and Cream.  They all have a nice chewy texture to them.

The exciting news about these bars is that they are diabetic friendly due to their size.  There are 2 mini bars in each package.  Each mini bar would contain 85 calories, 2.5 g fat, 10g carb, 4.5g protein, and 6.5g sugar.  My son likes one as a snack paired with some roasted almonds or as a sweet treat in his lunch.

A Sweet & Salty Victory

In my opinion, there is nothing more satisfying than a bag of BBQ chips!  Well...ok... maybe a bag of BBQ chips with a side of pepsi.

Having a son with celiac disease, I was sure the days of BBQ chips were OVER.  Boy was I wrong!


Here's how our discovery was revealed:  After being sick for over a week, I started craving salty foods.  My darling husband was so kind to go to the store and pick me up some chips.  As I saw that beautiful large yellow Utz BBQ potato chip bag come through the door, I could already taste that sweet bbq seasoning.

As I'm munching happily, I thought, "I wonder what's in these?"  As I turn the bag over and start reading the ingredients, I'm convinced that there must be gluten in these.  Then.....right there in capital letters......

THIS IS A GLUTEN FREE FOOD   

Oh, sweet victory!  If you like bbq potato chips, I urge you to try Utz's.

The Perfect Lunchbox

I believe that nutrition plays a huge part in keeping us healthy.  I came across a website that has changed the way that I prepare lunches for our whole family.  Their product makes eating fun and nutritious!

Delicious Gluten Free Snack

 I LOVE this new Kind bar!  There is nothing better to me than a mixture of nuts and chocolate.  Best of all, it's gluten free!  I feel good giving this to Andrew to eat since it's all natural, no trans fat and contains 7g of protein.


This particular bar has 17g carb in the whole bar. Since Andrew has to watch his fat and sugar intake, I only give him half in one serving.  You can view the wide variety of flavors on the  Kind website. They have introduced mini Kind Bars which I think is an AWESOME idea!

Mrs. Leeper's Chicken Alfredo Product Review

I'm always on the lookout for quick gluten free meals.  This chicken alfredo by Mrs. Leeper's is delicious!  The noodles taste like regular wheat noodles and are not at all mushy.

This is a one pot meal which makes it a cinch to cook and clean up.  I used 2 boxes for our family of five and had a little left over.

Serve this with some steamed broccoli or a salad and you're good to go!
